Cefalù is more than just crystal-clear waters, medieval alleys, and postcard-perfect views; it is also a treasure trove of centuries-old culinary traditions. Among the most deeply rooted recipes in the history and culture of this Norman town, Pasta a Taianu stands out as a dish that captures the essence of celebration, family, and local devotion.
The origin of this dish is linked to the Feast of the Santissimo Salvatore, Cefalù’s patron saint, celebrated every August. Traditionally, preparing Pasta a Taianu was a family affair in home kitchens across Cefalù. The dish takes its name from the taianu—the classic glazed terracotta pot in which the ingredients are carefully layered: rigatoni pasta, a rich meat ragù, fried eggplant, grated pecorino cheese, and fresh basil, all slow-cooked to yield a golden crust and a tender, savory center. It is a true taste of history, celebration, and togetherness.
Visitors arriving in Cefalù outside the August festival period often miss the chance to try this local specialty, as it is traditionally reserved for family holidays. We chose to do things differently. At Baglio Tinchitè—just as at our sister restaurant, Taverna Tinchitè—we are proud to be one of the few restaurants in Cefalù serving Pasta a Taianu year-round.
We want every traveller to be able to embark on a genuine journey through time and the traditions of Cefalù. Sitting in our garden and ordering a steaming plate of Pasta a Taianu means becoming part of a community, embracing the history of a region that jealously guards its flavours.
We look forward to welcoming you for an authentic taste of traditional regional cuisine. Book your table today!
