The Caponata
The key ingredient is eggplant, but not just any eggplant. The star of this dish is the ‘Violetta lunga palermitana’, characterised by its elongated shape. Why this variety? As it is firmer, it retains its shape even after being cooked twice. And here’s how to prepare it:
Ingredients
- 1 kg di eggplants
- 500gr celery
- extra virgin olive oil
- 2 onions
- 50-70 gr sugar
- 200gr green olives
- ½ glass dark vinegar
- fresh basil
- tomato sauce
- capers
Preparation
Dice the eggplants, cover them in salt for about an hour, and then rinse them with fresh water. After draining or patting them dry, fry them. Do not cook them all the way through; lightly fry them until golden. Meanwhile, wash the celery, remove the leaves, and chop the stalks into small pieces (about one centimeter). Boil the celery until it softens. Next, sauté a generous amount of finely chopped onion, then add the tomato sauce, olives, and the boiled celery. Finally, add the eggplants and continue to cook, ensuring the sauce at least partially covers them. Once fully cooked, it is time to make the sweet-and-sour finish. Nothing could be simpler: add the vinegar to the prepared eggplants, immediately followed by the sugar. Let everything simmer over moderate heat for a few minutes. It is best to let it rest for a few hours. Once the caponata has cooled down, garnish it with the reserved celery leaves, fresh basil, and capers.
Pasta a Taianu
Pasta a “taianu” (or baked in a pan) is a traditional dish from Cefalù. However, like many Sicilian recipes, its roots actually date back to the Arabs. In fact, the term “taianu” comes from the Arabic word “taio,” which refers to the earthenware pot used to cook the pasta. This simple dish is traditionally prepared for the feast of the patron saint, the Holy Savior (Santissimo Salvatore), celebrated from August 4th to 6th. Its defining feature is the layering of the pasta, alternating with rows of beef—slow-cooked in tomato sauce and shredded by hand—along with eggplants that are first fried and then also shredded, pecorino cheese, and plenty of fresh basil.
